They are made with a simple pie crust, a delicious filling, and a fluffy frosting. Ingredients 1 cup all-purpose flour 1/2 cup sugar 1/4 teaspoon salt 1/2 cup (1 stick) unsalted butter, cold and cut into small pieces 1 large egg yolk 1 tablespoon ice water 1 cup (2 sticks) unsalted butter, softened 3/4 cup sugar 1 teaspoon vanilla extract 2 large eggs 2 1/4 cups all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 1 cup raspberry jam Instructions 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a medium bowl, whisk together the flour, sugar, and salt. 3. Add the butter and use your fingers to work it into the flour mixture until it resembles coarse crumbs. 4. In a small bowl, whisk together the egg yolk and ice water. Add to the flour mixture and mix until just combined. 5. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes. 6. While the dough is chilling, make the filling. In a large bowl, beat together the butter, sugar, and vanilla extract until light and fluffy. Beat in the eggs one at a time, then stir in the flour, baking powder, and salt. 7. Divide the dough in half and roll out each half into a 12-inch circle. Place one circle of dough in a 9-inch pie plate and trim the edges. Pour the filling into the pie crust and top with the second circle of dough. Fold the edges of the dough over and crimp to seal. 8. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Let cool completely before frosting. 9. To make the frosting, beat together the butter, powdered sugar, and milk until smooth and creamy. Spread the frosting over the cooled pie and enjoy!
