"Wager on the steed you believe will triumph in the race. Each horse has statistics, including Minimum Speed (the lowest speed it will run at when out of stamina), Maximum Speed (the highest speed it will attain until it runs out of stamina), and Guts (which determines how quickly the horse will accelerate and how quickly it will run out of stamina)." In other words, you must choose the horse that you believe will be the fastest and have the most endurance. The horse with the highest Minimum Speed will be the slowest at the beginning of the race, but it will also be the last to run out of stamina. The horse with the highest Maximum Speed will be the fastest at the beginning of the race, but it will also be the first to run out of stamina. The horse with the highest Guts will accelerate the quickest and have the most endurance.
