Black Bean Lasagna Rolls

Black Bean Lasagna Rolls Ingredients: 1 pound black beans, cooked and drained 1/2 cup chopped onion 1/2 cup chopped green bell pepper 1/2 cup chopped red bell pepper 1/2 cup chopped fresh cilantro 1/2 cup shredded Monterey Jack cheese 1/2 cup shredded cheddar cheese 10 lasagna noodles 1 jar (26 ounces) pasta sauce 1/2 cup grated Parmesan cheese Instructions: 1. Preheat oven to 375 degrees F (190 degrees C). 2. In a large bowl, combine the black beans, onion, green bell pepper, red bell pepper, cilantro, Monterey Jack cheese, and cheddar cheese. 3. Spread 1/2 cup of the pasta sauce in the bottom of a 9x13 inch baking dish. 4. Place a lasagna noodle on top of the sauce. 5. Spoon 1/4 of the black bean mixture over the noodle. 6. Repeat layers of noodles, sauce, and black bean mixture until all of the ingredients are used up. 7. Top with the remaining pasta sauce and Parmesan cheese. 8. Cover with foil and bake for 30 minutes. 9. Uncover and bake for an additional 10 minutes, or until the cheese is melted and bubbly. 10. Let cool for a few minutes before slicing and serving.
