To make sure your cupcakes are evenly cooked, use a baking sheet with a muffin insert. This will help to keep the cupcakes from spreading too much. If you don't have a muffin insert, you can also line the muffin cups with cupcake liners. Just be sure to spray the liners with cooking spray before filling them with batter. To make the frosting extra fluffy, beat it on high speed for several minutes. If you want to add some extra flavor to your cupcakes, try adding some chocolate chips, nuts, or dried fruit to the batter.
